Easy Healthy Recipe Wednesday: Spinach and Red Lentil Soup with Chicken (6 Servings)

Remember I did red lentil salad awhile back?

Since everyone wondered why I did not use red lentils for soups instead, I thought I would give red lentil soup a try.

This soup recipe is perfect for your lunch.

Remember, for every lunch dish that are introduced in “Easy Healthy Recipe Wednesday and Thursday”, we aim for $3 CAN per serving maximum. Here is the recipe and cost of ingredients:

500 grams boneless chicken breast in julienne ($6.29 CAN)

5 cups water ($1.00 CAN)

1 cup red lentil ($1.00 CAN)

3 carrots, diced ($0.89 CAN)

1/2 cup red onion, diced ($0.88 CAN)

4 stalks celery, diced ($0.74 CAN)

1 bunch spinach, washed and cleaned ($1.49 CAN)

1 tablespoon vegetable oil ($0.50 CAN)

3 teaspoons thyme ($0.20 CAN)

3 teaspoons salt ($0.10 CAN)

3 teaspoons pepper ($0.20 CAN)


1) Pour vegetable oil into a heated pot.  Saute red onion until soften (about 5 minutes).


2) Saute carrots and celery until you smell the aroma of celery (about 4 minutes).


3) Cover the vegetables with water that you can easily stir them in the pot and bring the mixture into a boil.  Once you start to see some bubbling around the edges of the pot and a few wisps of steam on the surface, turn the heat down to medium-low.  Let stock simmer for about one hour.


4) While stock is simmering, marinate chicken with 3 teaspoons of thyme, 2 teaspoons of salt and 2 teaspoons of pepper.


5) When stock is ready, cook chicken and red lentils in stock over medium heat.


6) Once you start to see bubbling in the pot, cook spinach over medium.  Season soup with rest of salt and pepper. Serve soup when ready.


There you are!  I got to taste everything in the soup.  In fact, I smelled a strong celery aroma when I was making the stock. Therefore, I know this soup was GOING TO BE AWESOME!

Ultimately, this dish costs $13.29 CAN in total, which is $2.22 CAN per serving. It is much better to enjoy your favourite soup at home!

Fitness Tuesday: Why Is Everyone Obsessed With Zumba?

I know Zumba has been around for a while, but my first experience with Zumba was actually when I was playing “Just Dance 2014” and I WAS HOOKED.  I do not have Xbox, so I basically “play” this game on Youtube now!

My mom also loves Zumba and she does Zumba four times a week.

But how come we are so hooked with Zumba? Here is why:

1) Moves Are Different Every Class – With any other cardio classes, the moves are pretty much the same.  Even if there are changes, they are very minor. With Zumba, however, the moves can be different due to the music and instructor. Therefore, you would not know what to expect for every class. Exciting eh?

2) It Is Not Too Hard On My Body – Many aerobic classes out there require the use of weights.  Also, you may have to move very intensely. For instance, you constantly have to move your body up and down in a Step Aerobics class.  As a result, some people may have a hard time to keep up.  With Zumba, however, the moves are very light and easy.  Therefore, it is not too hard on your body.

3) It Is A Group Exercise – Believe it or not, Zumba is mostly done by women and women LOVES GROUP EXERCISE because they can smile and laugh at each other.   No wonder a lot of people do Zumba because it is such an encouraging environment.

4) The Music Makes Me Excited – Apparently, Zumba improves people’s mood because the music is too exciting to remember their bad days.

5) I Am Going To Be The Next Contestant on “So You Can Think You Can Dance” – Doing Zumba makes me feel I am a professional dancer and I perhaps am able to win the next season of “So You Think You can Dance”.

OH MAN! I still suck at “Just Dance 2014” even though I played it MANY time.  I guess I should join a real dance lesson to improve my coordination.

Healthy Facts Monday – Calories Face-Off: Chipotle vs Freshii

Freshii is another fast-casual restaurant chain that has franchises all over the world including the USA, Canada and Sweden. Freshii offers a menu of salads, burritos, wraps, rice bowls, yogurts, breakfast and soups made with high quality, fresh ingredients. Freshii’s meals are also full of fibres, essential fats, lean proteins and slow-burning carbs.  But are Freshii’s food necessary healthier than other fast-casual restaurant chain? In this week’s “Healthy Facts Monday“, we will compare calories of food served at Chipotle and Freshii.

Really? Freshii’s food are healthier than Chipotle’s?

Well! I got all of Freshii’s nutritional information from several external sources.  Many of them mentioned sauces were not included in the calories calculation.  If this is true, Chipotle’s food probably have less calories than Freshii.

Toronto Restaurant Review: Kupfert and Kim (Rating: 2.5 out of 5)



Every time I walked by Kupfert & Kim I saw a huge line up, which means their food is good right?

I passed by Kupfert & Kim again last Tuesday and I thought I would give this restaurant a try this time.

I ordered Kim because the server suggested.  I also ordered their Daily Cold Tea, which was Southern Ice Tea, because it was a hot day.  I paid almost $15 all together.


As of Kim, I love the almond chili sauce, organic tofu, and pickle carrots, but I thought the veggies were not fresh enough.  Also, the portion size, I thought, was too small for its price (it costed close to $10).   I even tried the green sauce that was given to me and I did not like it.  All I tasted was the spiciness.

As of the Ice Tea, it tasted just like any ice teas out there.  But it was not too expensive (it costed around $3), so I thought it was worth it.

Overall, I think this restaurant is overrated.  There are other restaurants that serve similar food with better quality. I was disappointed.

People Need To Pick Their Soulmates Wisely


This post is dedicated to people who keep on complaining about their love lives, but they have been choosing the wrong people this whole time.

These people usually fall in love with people with great physical appearance.

They also prefer to date with someone who grows up in a good family with great wealth and profession.

Also for guys, they want her to be shallow and innocent while girls want him to be smart and confident.

Lastly, guys want his girl to make less money than him while girls want her guy to make more money than him.

However, when you ask them why don’t they date with their closest friend in the opposite sex, they give you answers like: “He/She is family to me”, “She/He is not my cup of tea”, “She makes more money than me”, “She is smarter than me” and etc.


WHY? Because they do not understand this: COMPATIBILITY.

I am not a relationship expert, but I had been in a good relationship and I know none of what these failing-in-love people think make a relationship successful.

These people should be looking for someone who is compatible with them:

1) Financially Compatible – I would not date with a guy who love to have nice dinners or nice things all the time because I am not like that.  In fact, I am more a saver who would ONLY splurge on things I really need and they are usually in excellent qualities. My ex was pretty much the same and I appreciate guys like him.

2) Have Similar Interests – Imagine how you are going to spend your weekends when you are into outdoor activities but your partner rather spend his/her time indoors. Trust me! It is NOT FUN AT ALL!

3) Share Same Preferences – Again! I would not date with a guy who IS TOTALLY into the latest GQ Magazine and tries to mimic the guy on the cover.   I do not follow fashion trends at all and I wear whatever is comfortable.

On top of the points above, respecting each other’s brains, learning to compromise, and being vocal of your wants and needs honestly are also crucial to make your relationship last.

Don’t get me wrong! I did not know what compatibility means until my last relationship.  We had pretty much everything I listed above. We broke up just because there were some external circumstances that we could not control.

But I was glad I met him. If not, I would still be searching for the right person in the wrong direction.

SO GUYS AND GIRLS! Finding your soulmate is all about COMPATIBILITY AND LOVE.

You may not believe me now! But please do not cry when you realize the man/woman-who-carry-my-list-of-criteria you marry to is not what you expect he/she is.

You probably want a divorce as well, but realize you cannot afford to because it is too expensive.

Then you feel regret of everything you did and you probably have to spend the rest of your life miserable.

So TAKE MY WORD FOR IT.  You will be thankful!
