Easy Healthy Recipe Wednesday: Oatmeal Raisin Casserole (3 Servings)

As you guys all know, I have oatmeal for breakfast every morning.  And one day, I was thinking how else can I use rolled oats to make a delicious dish. I was thinking of cooking fruits with rolled oats and milk together, but that did not work that well.  Then I was reading this cookbook and saw recipes of casserole and they inspired me to make this Oatmeal Raisin Casserole dish for breakfast. Remember, for every breakfast dish that are introduced in “Easy Healthy Recipe Wednesday and Thursday”, we aim for $2 CAN per serving maximum. Here is the recipe and cost of ingredients:

1 teaspoon avocado oil ($0.10 CAN)

2 cups fat-free milk ($1.15 CAN)

1 tablespoon butter ($0.26 CAN)

1 cup regular rolled oats ($1.00)

1 cup apple (I used Granny Smith), chopped ($0.60 CAN)

1/3 cup dried raisins ($0.67 CAN)

0.5 cup walnuts, chopped and toasted ($1.05 CAN)

0.5 teaspoon vanilla extract ($0.64 CAN)

0.25 teaspoon salt ($0.05 CAN)

4 teaspoons brown sugar ($0.06 CAN)

1) Combine milk and butter and bring it to a boil in a pot over high heat.  Make sure you keep stirring to prevent sticking.

2) When milk mixture boils, slowly stir in rolled oats until mixture boils again.

3) When mixture boils, stir in apple, raisins, walnuts,  vanilla and salt.  Cook and stir until bubbly.  Keep cooking the mixture for about 2 minutes.

4) Preheat over to 350F. Lightly coat a casserol with avocado oil.  Pour the cooked mixture into the casserole when mixture is ready.  Distribute the apples evenly.

5) Bake casserole for 8 minutes or until bubbly around the edges.  Sprinkle with brown sugar and put casserole back to the oven for 2 minutes or until bubbly around the edges. Cool casserole slightly and serve.

And there you are! So the total cost to make this dish was $5.58 CAN.  That means it costed $1.86 CAN per serving. Not only this recipe is affordable, but this casserole was also fully of flavours.  You got the sweetness from the raisins and brown sugar. Moreover, you got the crunchiness from the walnuts.  Lastly, you got the slight sourness from the apples.  I chose Granny Smith for this recipe because Granny Smith is sour and hard.  Therefore, the apples still retained some of their sourness and not being too soft to be eaten after being cooked.
