Easy Health Recipe Wednesday: Refreshing Lentil Salad (6 Servings)

If you love lentils and want to add a lentil salad recipe to your recipe collection, this is the perfect one for you.   This recipe is great for lunch. Also, it is affordable and easy-to-make.

Remember, for every lunch dish that are introduced in “Easy Healthy Recipe Wednesday and Thursday”, we aim for $3 CAN per serving maximum. Here is the recipe and cost of ingredients:

20 grape tomatoes, sliced ($0.98 CAN)

2 oranges, peeled and cut into segments ($2.00 CAN)

2.5 cups red lentils ($1.40 CAN)

0.5 cup green onions, coarsely chopped ($0.29 CAN)

0.25 cup fresh cilantro, coarsely chopped ($0.16 CAN)

1/3 cup lemon juice, freshly squeezed ($0.60 CAN)

2 tablespoons avocado oil ($0.75 CAN)

0.5 teaspoon ground black pepper ($0.10 CAN)

1 teaspoon salt ($0.20 CAN)

1) Boil a pot of water over high heat.  Add salt and lentils when water boils.  Cook lentils over medium heat until lentils are firm but tender (about 20 minutes).  Let lentils rest and cool.

2) In a large bowl, combine tomatoes, oranges, lentils, green onions, and cilantro.

3) Drizzle mixture with lemon juice and oil; toss to coat. Sprinkle with pepper and salt.

WOW! This salad tasted great! I could taste the orange, tomato, cilantro, green onion and lemon. It is very refreshing.  You can also add walnuts or almond if you want to add some crunch to the dish.

Ultimately, this dish costs $6.48 CAN in total, which is $1.08 CAN per serving. Very affordable eh?

    • I was thinking of using green or brown lentils, but I thought using red lentils made the salad look more appetizing. That was why I used red lentils. The salad was VERY REFRESHING.
