I came across this recipe when I was reading LL Cool J’s new fitness book. Since it is very healthy and very easy to use, I figure I would show you guys the recipe.
This recipe is great if you want to light lunch.
Remember, for every lunch dish that are introduced in “Easy Healthy Recipe Wednesday and Thursday”, we aim for $3 CAN per serving maximum. Here is the recipe and cost of ingredients:
1/2 can water-packed chunk light tuna, drained ($0.50 CAN)
1 cucumber, cut into four and seeded ($0.99 CAN)
one-quarter red onion, chopped ($0.30 CAN)
half carrot, shredded ($0.15 CAN)
1/2 cup fat-free plain yogurt ($0.60 CAN)
1 tablespoon fresh lemon juice ($0.25 CAN)
salt and black pepper to taste ($0.05 CAN)
1) Mix yogurt, lemon juice, onion, carrots, and tuna in a bowl.
2) Fill the seeded cucumber with the mixture.
And voila! This dish is literally tuna salad with a twist. You can also cut the cucumber into small portion and enjoy the same way, or serve the tuna mixture with whole-grain crackers.
Ultimately, this dish costs $2.84 CAN in total, which is $2.84 CAN per serving. NOT BAD!!!
