This is another fine dining inspired salad I just made this morning.
I got all the ingredients first thing in the morning and my family loved it because the ingredients were so fresh.
Here is how I made it:
6 cups arugula and baby spinach mix
1 avocado, chopped
1 pear, chopped
1 cup walnuts
zest of 1 lemon
juice of 1 lemon
2 teaspoons sesame paste
1 clove of garlic, minced
2 tablespoons extra virgin olive oil
salt and pepper to taste
1) Heat oven to 250F. Toast walnut in the oven for 20 minutes. Set aside when finish.
2) Mix garlic, lemon juice, lemon zest, sesama paste, extra virgin olive oil, salt and pepper together. Set aside.
3) Plate all the ingredients. Spread dressing onto ingredients. Serve when ready.
Salad is always best when all your ingredients are fresh.
I also added sesame paste to enhance the zesty flavour of the dressing.
If you do not have sesame paste at home, you can try using sesame oil.
If you think the dressing is too sour, you can add liquid honey to balance the flavour out.
